    Step 1

    馅料做法Method for the filling: 1.把绿豆片和班兰叶一起蒸20分钟至熟,放入研磨器,和馅料B一起搅拌至混合。Steam filling A for 20 minutes until soft and cooked.Blend hot beans and filling B in a food processor to combine.

    2.把绿豆蓉和莲蓉混合,然后分成等分,并搓圆。Combine filling mixture with lotus paste. Divide into equal portions and shape into balls.

    月饼做法Method for mooncake:  1.水皮做法:把糖粉和白油混合,然后倒入温水和醋,再筛入两种面粉,搓成面团,以保鲜膜覆盖,让它醒25分钟,然后分成7等份。Water dough:Combine icing sugar and shortening in a mixing bowl. Pour in warm water and add vinegar to mix. Sift in flours and knead into a soft dough. Cover and leave aside for 25 minutes. Divide dough into 7 equal portions.

    2.油皮做法:把面粉放入平底碗蒸5-6分钟,待凉后加入白油搓成面团,并分成7等份。Oil dough:Steam flour for 5-6 minutes. Leave to cool. Add in shortening and mix into a dough. Divide dough into 7 equal portions.

    3.把油皮包入水皮里,包紧后杆平,卷成瑞士卷状,重复做两遍。头尾两端不平的部分切掉。Wrap oil dough with water dough. Flatten the dough and roll into swiss roll style. Repeat twice, then trim off the unequal edges.

    4.把切面向上,然后杆成圆形,中间部分要比边缘厚些。Place the cut-side down and roll out the dough round.

    5.包入一分馅料,用之前切出的面团杆成圆形做底部。Wrap in filling but do not seal up the bottom. Flatten a piece of cut-off dough. Lightly wet the edges and place the prepared mooncake over.

    6.把月饼放入预热至170℃的烤炉里烤20分钟或至熟。Bake the mooncakes in a preheated oven at 170℃ for 20 minutes or till cooked but not golden.
